OOTD & Mexican Stir Fry

So last week my best friend was home on Spring Break, so we went downtown! This was my OOTD. Shirt, shoes, and necklace were all from Target and the jeans are from American Eagle. See? You can look nice on a budget! I went back to Target and got the same shirt in another color since I loved it so much!

Then when I got home, I made a Mexican stir fry for my family and boyfriend for dinner!

Ingredients:

-3 thin sliced chicken breasts

-Fajita marinade

-onions

-assortment of peppers (my boyfriend cannot have spicy food so I had to tone it down a bit with bell pepper, but jalapeno and anaheim are a good choice for this!)

-broccoli

-rice

-crushed red pepper

-black pepper

-mexican chile powder

-minced onions

-coconut oil

Instructions:

Let the chicken marinate for a few hours (I marinated mine in the morning before work). Turn the oven to 350 degrees and bake it until the center is no longer pink (my thin sliced ones took around 10 minutes). Cook the rice according to the package. Put coconut oil in a skillet and mix in all the veggies and sautee. When the chicken is cooked, slice it and throw it in with the veggies and add your seasonings and continue to sautee for a few minutes. When they are cooked to your taste, put the rice in a bowl and top it off with your chicken and veggie mix!
